Healthy and delish!

Steaming is a healthy, delicious, and especially easy way to cook a great meal. When you think of steaming, visions of overcooked, bland, food comes to mind, but this doesn't have to be the case! If done properly, steaming can be full of flavour and nutrients as opposed to boiling where the nutrients are lost in the water, and is as simple as chopping your ingredients up, throwing it into a steamer and waiting.

Steam Chicken breasts with vegetables

1 skinless, boneless chicken breast
3 new potatoes, washed with peel on
several pieces of sui choy to line bamboo steamer
bamboo steamer
Montreal steak spice (or combo of salt, pepper, paprika and whatever yummy spices you have)
1 cup of frozen veggie mix

Sprinkle steak spice lightly over sui choy and lay flat in bamboo steamer. Sprinkle more spice liberally onto both sides of chicken and rub into the meat. Chop potatoes into quarters. Throw chicken and potatoes into steamer and cover. Place steamer in a wok 1/2 filled with water, or alternately on a wire steamer rack in a large pot. Cook at med-high heat for 10 minutes until steam billows out, then lower heat and cook for another 20 minutes. About 10 minutes before chicken is done, cover frozen veggie mix with water in a pot and bring to a boil. Serve and enjoy!

Update (Feb. 11): I forgot to mention, but I also had tossed in some minced garlic (and optionally I've heard chives taste great too) into the steamer to add extra flavour!
