I came up with this recipe the other night when I had some defrosted chicken thighs that needed cooking and some late night munchies while watching The Colbert Report. You could eat is as a snack or as a meal with steamed rice. Enjoy!- Chicken thighs
- Baby spinach
- Roma tomatoes cut into chunks
- Turmeric
- Fennel seeds
- Curry powder
- Red onions, chopped
- Vegetable oil
Cover chicken with layer of curry powder and turmeric. Brown chicken in hot vegetable oil in pot. Once chicken is cooked, scoop out of pot and put aside. Throw in red onions and fry in the cooking juices from the chicken for 2 minutes. Add in tomatoes and a sprinkling of fennel seeds. Stir fry for a minute. Add back in chicken and cook for another minute, stirring constantly. Serve immediately on a bed of baby spinach.

I've never tried anything with curry powder before, but this looks absolutely delicious - and healthy! I may just have to give it a whirl - especially now that the weather is getting warmer! :)
